Comfort food does not have to be fried or fast food. Here is a super easy recipe, ready in 20 minutes, that will convince you!
You will want to share it with all your friends once you’ve tried. 😉

Ingredients

  • 340g of raw spaghettis
  • 1 cooked small salmon filet
  • ½ smoked salmon pack of 300g
  • 2 small ripened tomatoes cut in half then in slices
  • 1 ½ Cup of sliced mushrooms
  • 1 bunch of minced green onions (or more to taste)
  • ½ Cup of milk
  • Salt and pepper to taste

Preparation

  1. In a big saucepan, get the water to boil to cook the pastas following instructions on the package. At the end of the cooking time, pick at least 1 cup of the water before draining. (This will help thickening the sauce.)
  2. Meanwhile, cook the salmon either by poaching or frying in a pan.
  3. In a big pan, brown the mushrooms. Once browning is satisfying, add the tomatoes, the cooked salmon and ½ of the minced green onions.
  4. Once they are smoothened, add a bit of the pasta water to wet.
  5. Add the smoked salmon and the rest of the green onions.
  6. Add the milk.
  7. Seasoned to taste.
  8. Let it simmer on low for about 5 minutes. Add pasta water the keep the sauce-like consistency.
  9. Add the spaghettis and serve immediately.
  10. Enjoy!

Pssstttt! This makes perfect lunch and is 100% Logan approved (my son).

  • ½ pqt de saumon fumé de 300g
  • 2 petites tomates bien mûres coupées en 2 puis en tranches
  • 1.5 T de champignons tranchés
  • 1 botte d’oignons verts émincés (ou plus si vous aimez)
  • ½ T de lait
  • Sel et poivre au goût

Préparation

  1. Dans un grand chaudron, mettre l’eau à bouillir pour cuire les pâte. Lorsqu’elle bout, suivre les indications sur l’emballage pour cuire vos pâte à la perfection. À la fin de la cuisson, prélever au moins une tasse de l’eau des pâtes avant d’égoutter. (Pour épaissir la sauce plus tard.)
  2. Pendant ce temps, faites pocher ou cuire votre saumon. Salez et poivrez pour assaisonner.
  3. Dans une grande casserole, faites revenir les champignons. Quand ils sont bien dorés, ajouter les tomates, le saumon cuit et la moitié des oignons verts hachés.
  4. Quand tout est semi-tendre, ajouter un peu de l’eau des pâtes pour mouiller le tout.
  5. Ajouter le saumon fumé et le reste des oignons verts.
  6. Ajouter le lait.
  7. Assaisonner au gout.
  8. Laisser mijoter à feu doux pendant 5 minutes en ajoutant un peu d’eau des pâtes si c’est nécessaire pour la consistance de la sauce.
  9. Incorporer les spaghettis et service immédiatement.
  10. Savourez

Night time

I have never been a real morning person. I fake it because life is requesting of me that the days begin early. And it’s fine. I enjoy doing a lot of things in the morning to relax a bit in the afternoon, « savourer » a little sleep in a sun ray.

Every moment count

I have become a mother not so long ago and my cycles (day-night-sleep) have changed. Ever since, I realize everyday how life is about small things and my ability to make every moment count. For example, we I come home at night with my son, we don’t have much time together before he goes to bed. So, what do I do? I play with him until dinner time. I leave my phone in a drawer somewhere (unless I take pictures) and I am fully present with him, for us both. I don’t want to be angry at Time. I am presently reconsidering some choices that I made to allow me to spend more family time… I will get there.

After dinner it’s bath time and, then, we play again. Finally, he goes to bed and my wounded torture mother heart feels better because the evening mattered.

I apply the same mindfulness concept for myself. When the lights go off, it is the time for me to connect with my soul and to bond with nature.

Sometimes it happens all in my head when I review the day and consider if my decisions are align with my plan. Mostly in summer, I will enjoy a small walk in the warmth of the night to recharge my battery and connect with magic and mystery.

Connecting with myself every night has always helped me to stay strong and captain of my destiny. I am not alone now but I will never give up on Me and will continue to date myself every night. For my own good.

The Ring

I bought that ring when I was pregnant of my son.

I chose it because of the combination of Tree of Life and the « Gratitude » inscription carved into the ring.  I though it graphically carried out how I felt.

Since my 25th birthday, all I wanted was to have a kid but I knew I had to make important choices to make it happen.  Finally, it was the gift life gave me on my 36th birthday.

If you have been pregnant, you know it ain’t always easy. You have to overcome great fears and physical important changes. But like I said, I had wanted to be a mother since I was 25 years old.  And I fought and worked hard on myself to end up giving birth to the most amazing little boy.  So, I wore and looked at that ring (still am) everyday as a reminder of my gratitude.  And looking at it, I realized that this dream came true because I kept a positive attitude in life and was thankful for all the little steps I would take toward that dream.

An Attitude to Keep

So, for me anyway, Gratitude is an Attitude that can change any ordinary life into a life full of light, kindness for ourselves an others and full of love.

When I can’t find the words or imagery to express how I feel, I turn to film stills. Raising kids is also about what we want them to remember when we’ll be gone. It makes me cry when I really think of it but it will happen sooner or later…

So, I am thinking, the next thing I would like my kids to remember after everyone deserves to be respected (you first), would be how to keep a positive focus on life.  That requires discipline, efforts and training.

I found this challenge on Pinterest and found it would be a good place to start.

I am reposting this because, knowing a little more about ourselves certainly helps us being better and more conscious parents.  I actually went online to take the Myer-Briggs test and the results were just amazing.

Finaly, I could put into words feelings I had about myself for years. If you want to know, I am a campaignerCampaigner or ENFP. I am part of the Advocate Family (that I knew).

It’s all clearer for me now how discipline is not my biggest strength but that I will be very good at helping my child see the different angles of situation or  to teach him how to size people better.
